Freeze-Dried and Dehydrated Vegetables

Freeze dried vegetables are (mostly) as nutritious as fresh vegetables, and they retain their freshness for up to 25 years. Plus, freeze-dried veggies are lightweight and take up far less space than their fresh counterparts. Dehydrated vegetables are also an option, but freeze-dried veggies tend to taste and look more appealing, last longer, and rehydrate with better results. That's why freeze-dried vegetables have been a go-to staple for long-term food supplies, hikers' backpacks, and homesteaders' pantries since the 1970s. Originally developed by NASA in 1969 to preserve astronauts' food supplies, the technique is even available in your own house with a home freeze dryer.
